Black n Spicy Fish

1 tsp. Paprika 

1 tsp. Garlic salt

1 tsp. Onion powder

1/2 tsp. Oregano

1/2 tsp. Black pepper 

1/4 tsp. Cayenne pepper

1/4 tsp. Ground thyme

2 lbs. fish

Combine spices, press mixture on both sides of fish.  Heat large skillet over medium heat. Spray pan with butter spray. Cook 5 minutes on each side.

 


Sausage and Rice Casserole

1 lb. sausage, crumbled and browned in skillet

1 onion, chopped

1 green pepper, chopped 

1/2 cup celery, chopped

1 cup minute rice (uncooked)

1 (4oz.) jar pimento pepper

1 cup grated cheese

1 can cream of mushroom soup

Drain sausage after browning.  Add other ingredients.  Place in a baking dish.  Bake at 350 degrees for 45 minutes.


Pork Chop Casserole

4 pork chops

2 medium onions, sliced thin

2 cups raw potatoes, sliced thin

1 can cream of chicken soup

3 Tbsp. Oil for frying

flour 

salt and pepper to taste

Flour and salt and pepper pork chops.  Brown in oil on both sides. Remove chops. Sauté onions over medium heat until they are clear looking. In casserole dish, place a layer of raw potatoes and a layer of onions. Repeat until all is used. Place pork chops on top; pour soup over top. Cover and bake 350 for about 1 hour and 20 minutes.


Honey Garlic Slow Cooker Chicken Thighs

4 skinless, boneless chicken thighs

1/2 cup soy sauce

1/2 cup ketchup

1/3 cup honey

3 cloves garlic, minced

1 teaspoon dried basil

 

Lay chicken thighs into the bottom of a 4 quart slow cooker.

Whisk soy sauce, ketchup, honey, garlic, and basil together in a bowl; pour over the chicken.

Cook on low for 6 hours.


Maple Bourbon Oven Baked Salmon

1 pound salmon, with skin

2/3 cup maple syrup 

1/3 cup bourbon 

1/4 cup orange juice 

1/4 cup soy sauce 

3 cloves garlic, minced

1/4 teaspoon cayenne pepper

salt and pepper, to taste

2 tablespoons olive oil

Preheat oven to 400.

In a medium bowl, combine maple syrup, bourbon, orange juice, soy sauce, garlic, cayenne, salt, and pepper.

Place salmon in a shallow baking dish.  Add liquid mixture to dish, submerging fillet; refrigerate and marinate for 30 minutes.

Drain most of marinade from baking dish, and reserve. Bake salmon 10-15 minutes (adjust cooking time depending on thickness of fillet and desired doneness).

While salmon cooks, pour marinade into sauce pan. Bring to a boil then reduce heat to low and let simmer until liquid thickens into a glaze like consistency, about 10 minutes. Remove from heat and top salmon with glaze.


Sloppy Joes

2 1/2 pounds ground beef
1 large sweet pepper,  diced
1 large onion, diced
5 garlic cloves, minced
1  1/2 cups ketchup
2 tablespoons packed brown sugar
2 teaspoons chili powder, or more to taste
1 teaspoon dry mustard
1/2 teaspoon red pepper flakes, or more to taste
Worcestershire to taste
Tabasco to taste
Salt and pepper to taste

Brown beef and drain, then add the pepper, onion and garlic.  Add ketchup and 1 cup water stir to combine.  Then add brown sugar, chili powder, mustard, red pepper flakes, Worcestershire sauce, Tabasco, salt and pepper. Stir to combine, then cover and simmer for about 30 minutes.  Serve with a roll of your choice.  Enjoy!


Taco Soup

2lb. browned hamburger meat
2 cans ranch style beans
2 cans whole kernel corn
2 cans diced stewed tomatoes
1 pkg. ranch style dressing mix
1 pkg. taco seasoning

Brown and drain meat, add all the other ingredients. Simmer a few hours, then enjoy. It goes great with frito chips and sour cream.
